MZIANI TSIVI is a living tea. Sun drying preserves enzymes and chlorophyll. Active microbiome cultures continue to develop in the leaf — antioxidant levels increase with aging. The biochemistry of MZIANI TSIVI is dynamic, not static.

Character
Alive. Changes with every brew. Like a mountain river — cold, clean, with character. The first infusion is the introduction. Third through fifth are the peak.
Name Legend
ცივი (Tsivi) means "cold" or "cool" in Georgian. In traditional Georgian medicine, "cold" denotes cleansing. MZIANI is always stated for this type — traditional Georgian living tea implies sun drying. The two words together describe what the leaf is and how it became that way.

How MZIANI TSIVI is Made
- Plucked: bud + 2 leaves, hand-picked
- Withered: 4 hours in the shadow
- Fixed (kill-green): 7 minutes at 220°C
- Rolled: 30 minutes
- Sun-dried: 12–24 hours under open sunlight (the MZIANI step)
- Final drying: 3 hours at 40°C
Brewing
- Water: 95°C
- Leaf: 5 g per 200 ml
- First infusion: 20 seconds
- Each next: +10 seconds
- Total infusions: 5–8
Each infusion differs from the previous. The leaf evolves through the session.
